Ingredients:
- 1 egg white beaten up stiff
- 25 gr.castor sugar
- 2-3 drops green food dye
- 2 kiwis
- 1 small green melon
- 4 green apples
- 225 gr. green grapes
- 300-450 ml. Champaign or sparkling white wine
- A few mint sprigs
Preparation:
Pour the beaten up egg white in a shallow bowl and dip the rims of four high glasses in it. Then dip the glasses in the green dyed sugar to make it stick on the egg white and form a line around the rim. Leave to dry.
Peel the kiwi, cut into slices and then into small triangles. Prepare the melon by cutting it into halves, remove the seeds and cut out the pulp into small balls with a melon scoop or a teaspoon. Cut the peeled and stoned apples with the melon scoop, stone the grapes if necessary and arrange all fruit in the glasses. Pour Champaign or sparkling wine on the fruit.
